Comfort Food for a Crowd

Potato Bacon Chowder

Everyone loves a hearty bowl of soup to warm the body on a chilly day. This recipe is sure to please the crowd,  thanks to a bit of bacon and cheese. Get the kids to help you in the kitchen and better yet, count on left-overs to feed your family in the days to come.

INGREDIENTS

8 Slices of bacon
1 onion chopped
8 c. potatoes, diced
2 c. chicken stock
1 c. sour cream
1 can of evaporated milk
1 t. salt
Pepper to taste
Shredded Cheddar

DIRECTIONS

Cook bacon until crisp and remove from pan. Saute onion in bacon renderings. Remove onion and drain on a paper towel. Meantime, cook potatoes in chicken stock and once fork tender, add onion, bacon (reserve some for a topping), sour cream, evaporated milk and seasonings. Simmer until heated throughout, do not bring to a boil. Serve with shredded cheddar and some of the reserved bacon on top. Enjoy!
