Eggs-tra Special Dinner Tonight!

Need a meal in a jiffy? Try a tasty Frittata

We’ve all had those dinners when we need something quick and we don’t want to sacrifice nutrition to get the family fed. Enter eggs. With a fanciful whip of the whisk, some fresh veggies and a dash of cheese, you can cook up a delicious frittata with less than a dozen eggs.

 WHAT YOU’LL NEED:

  • 3 cups of rough chopped vegetables. (Try new combinations like mushrooms, asparagus, green onions and red bell pepper)
  • 8 Eggs
  • ¼ c. water
  • 1 tsp. dried Italian seasoning
  • ½ c. shredded part skim mozzarella cheese (or choose your own favorite cheese!)
  • 1 Tbsp. grated Parmesan cheese

TO CREATE:

Heat oven to 375 degrees. Coat 10 inch non-stick skillet with cooking spray, heat over medium high heat until hot. Add vegetables and sauté about five minutes. Beat eggs, water and Italian seasoning in medium bowl until blended. Using a whisk or blender will add air bubbles, creating a fluffy frittata. Stir in cheese, pour mixture into skillet (with an oven ready handle). Cook over medium heat until eggs are set at edges, 5 to 8 minutes. Sprinkle with Parmesan cheese. Bake in 375 degree oven until top is lightly browned, eggs are completely set and no visible liquid from the egg remains, 8 to 10 minutes. Cut into wedges and serve with fresh fruit and whole grain toast.
