Family Friendly Faves: Meatloaf Cupcakes

There’s no question, Mom’s meatloaf has been the butt of many jokes over the years. Why not turn that idea around with this fresh take on that old family dinnertime standby. This clever recipe for meatloaf cupcakes with mashed potatoes as the tasty topper has just the mix of flavors to have your family grabbing more than just one. Best yet, it’s ready in under an hour, making this a nourishing and tasty way to feed your family when time is short.
INGREDIENTS
1 t. olive oil or coconut oil
1 c. chopped onion
1/2 c. finely chopped carrots
1 bell pepper, finely chopped
1 t. oregano
2 garlic, minced
1 c. ketchup
1 c. breadcrumbs
1 egg
1 t. Worcestershire sauce
1/4 t. black pepper
2 T. mustard
1-1/2 pounds of ground beef
GARNISH
Chopped chives
Cooked and chopped bacon
Drizzle with gravy
PREPARATION
Mix all ingredients. Coat muffin pan with cooking spray or butter. Spoon the meat mixture into the muffin pan, mounting the meat to resemble a baked cupcake. Bake at 375 degrees for 30 minutes. Let the cupcakes cool completely, about 6 minutes. Prepare instant mashed potatoes following directions on the box. To make the mashed potatoes with more of an icing-like consistency, add 1/2 cup cold milk. Put mashed potatoes into a pastry bag with a wide star tip and pipe the mashed potatoes on top of the meatloaf cupcakes. Drizzle with gravy. Sprinkle with bacon crumbles and chopped chives.
