Simple Salisbury Steak ready and waiting in less than 30 minutes

When school hits and your family activity calendar seems to fill up at lightning speed, there's no time better to have a few fast, hearty and healthy recipes at the ready in your recipe box. Tasha Mills is an expert at budget-friendly meals that are fast and her recipe for Salisbury Steak is a frequent "go to." She says, "I love this recipe because it can be on the table in 30 minutes, is healthy and my family loves it." Not to mention she says, "It's a comfort food that satisfyingly fills you without having the heaviness that beef sometimes bring with a hearty meal." She serves this up with her special recipe of Garlic Cheesy Ranch Mashed Potatoes  and Snappy Green Beans. In less than a half hour, her family is sitting down to a home cooked hearty and healthy meal.

SIMPLE SALISBURY STEAK
Recipe from Tasha Mills

INGREDIENTS
1 egg
1 clove of garlic, minced
1/3 c. dry bread crumbs
1 t. pepper
1 can reduced fat condensed cream of mushroom soup (divided)
1/4 c. finely chopped onion
1 pound lean ground turkey
1/2 c. fat-free milk
1 - 2 t. Worcestershire sauce (depending on taste)
1-1/2 c. sliced fresh mushrooms

DIRECTIONS
In a bowl, combine the egg, garlic, bread crumbs, pepper, 1/4 cup of soup, onion, and turkey. Mix well. Shape into 6 patties. In a large nonstick skillet (I use an electric skillet), brown the patties on both sides. In a bowl, combine milk, Worcestershire sauce, and remaining soup. Stir in mushrooms. Pour over patties. Reduce heat and cover, simmering for 15 to 20 minutes or until meat is no longer pink.

 

SNAPPY GREEN BEANS
Recipe from Tasha Mills

INGREDIENTS

2 lbs green beans
2 t. butter
2 T. parsley
2 t. lemon juice
Sea salt & pepper to taste

DIRECTIONS
Place beans in a saucepan, cover with water. Bring to a boil. Reduce heat and simmer uncovered for 10-15 minutes or until crisp-tender. Drain. Place back in warm pan, add butter and stir until melted. Add parsley, lemon juice, salt & pepper, toss to coat. Serve immediately.

GARLIC CHEESY RANCH MASHED POTATOES
Recipe from Tasha Mills

INGREDIENTS
6 medium yellow potatoes
1/2 packet Ranch dressing mix
1 tbsp garlic salt with parsley
2 tbsp fresh Parmesan cheese
4 tbsp butter milk to creamy consistency sea salt & pepper to taste

DIRECTIONS
Wash and dice potatoes (do not peel them). Place in a large pot, cover with water. Bring to a boil, reduce heat to medium - high and low boil for 15 - 20 minutes checking to make sure they are soft/done. Drain and return to pan. Add all ingredients and beat with a mixer until desired consistency is reached. Serve immediately.
